Cube type matters too: full and half cubes suit most drinks, nugget ice suits healthcare and some bars, flake ice suits food display. We look at your menu, bar volume and peak hours, and at the space and power available, before recommending a size. An undersized machine runs flat out and still runs out of ice; an oversized one wastes space and water.
Water filtration and drains
Every machine we install gets a water filter with a scale inhibitor sized to its production, because Miami's hard water scales evaporators quickly. The drain has to handle the melt and harvest water with the right slope and an air gap as plumbing code requires, and the bin drain and machine drain are run correctly. We also check water pressure, since low pressure causes slow or incomplete fills, and we leave a dated label on the filter housing so staff know when the cartridge is next due for a change.
Air-cooled or remote condensers
Air-cooled machines reject heat into the room, which works if the room has airflow and doesn't get too hot; a machine in a hot, closed back room runs slowly and fails early. Remote condensers put that heat outside or on the roof, which suits busy kitchens and bars with little ventilation. We look at the space and recommend the type. For remote systems we run and insulate the lines, set and anchor the condenser, and pressure-test, evacuate and charge the system.
